The Job:

We're seeking an Executive Sous Chef to be responsible for the overall communication, management, and organization of the kitchen department. The Executive Sous Chef will report to the Executive Chef.

The kitchen department includes three dining venues, additional assisted living facilities, ancillary dining services, and all special meals and functions. This responsibility includes the management of staff, budget compliance, meal preparation, inventory control, menu planning, meal presentation, food safety, resident satisfaction, and regulatory compliance. The Executive Sous Chef ensures that policies and procedures established by Fox Hill Village are maintained consistently on each shift.

Essential Functions & Responsibilities:

  • Cooks, or otherwise prepares, high-quality, nutritious meals with excellent food presentation according to recipes and/or menu that reflects the taste of Fox Hill Village residents.
  • Oversees all kitchen operations. Completes food and supply orders as directed by the executive chef, food production, function food preparations and presentation, timely service of meals, consistent portions, and tends to special dietary requirements.
  • Ensures proper storage and food handling, adheres to all Board of Health regulations and guidelines.
  • Maintains, cleans, and sanitizes kitchen and equipment daily.
  • In the absence of the Executive Chef, the Sous Chef acts as the primary contact with the local health department.
  • Responsible for interviewing, hiring and training of all kitchen employees; planning, assigning and directing work; rewarding and disciplining employees; addressing complaints, and resolving issues immediately.
  • Displays a positive and professional image and attitude in all relationships with residents, families, staff, management, and the community.
  • Participates in regularly scheduled meetings.
  • Reply to all email and voicemail messages immediately.

Job Requirements:

  • Demonstrates good judgment, problem solving and decision-making skills.
  • Proficiency in computer skills, Microsoft Office & the ability to learn new applications.

  • Flexible work schedule, including nights and weekends and on-sight presence during meal periods and/or emergencies. On-call availability

Education and/or Experience Requirements:

  • Bachelor's degree and/or equivalent experience in a fine dining atmosphere
  • Extensive experience in managing budgets
  • Proficiency with Microsoft Office (Windows, Outlook, Excel)

Supervisory Requirements:

  • Responsible to supervise the kitchen staff in absence of the Executive Chef

Physical Requirements:

  • Must be able to stand and walk intermittently throughout the working day, as well as reach, stoop, bend, lift, carry, and manipulates various food products, dietary supplies and kitchen equipment.
  • Must be able to lift and/or carry 50 pounds and withstand exposure to temperature and humidity changes as in entering refrigerated storage areas, working at ovens, ranges, dish-washing machines, and at steam tables.
